- Cover the dough with a damp cloth and let it rest for at least 30 minutes.
2. *Rolling and Layering:*
- Divide the dough into equal-sized balls (about the size of a golf ball).
- Take one dough ball and roll it out into a thin disc using a rolling pin. The disc should be as thin as possible.
- Brush the rolled-out dough with a thin layer of ghee or oil. Sprinkle a little flour over the ghee/oil.
- Fold the dough into pleats (like a fan) from one end to the other. Once pleated, roll it into a tight spiral, tucking the end underneath.
- Gently flatten the spiral with your palm and roll it out again into a disc, keeping the layers intact. The thickness should be about 1/4 inch.
3. *Cooking:*
- Heat a tawa (griddle) or a non-stick skillet over medium heat.
- Place the rolled-out paratha on the hot tawa. Cook until you see bubbles forming on the surface, then flip.
- Brush the cooked side with ghee or oil and flip again. Repeat this process until both sides are golden brown and crispy, ensuring the paratha is cooked through.
- Press the paratha gently with a spatula for even cooking.
4. *Serving:*
- Once cooked, transfer the lacha paratha to a plate and lightly crush it with your hands to separate the layers.
