Chicken Cheese Handi Recipe



Ingredients:


For the Marinade:

- 1 kg boneless chicken, cut into small pieces

- 1 cup yogurt

- 2 tablespoons ginger-garlic paste

- 1 tablespoon red chili powder

- 1 teaspoon turmeric powder

- Salt to taste


For the Gravy:

- 2 large onions, finely chopped

- 3 tomatoes, pureed

- 1 cup heavy cream

- 1 cup grated cheese (cheddar or mozzarella)

- 2-3 green chilies, slit

- 1 tablespoon ginger-garlic paste

- 1 teaspoon cumin seeds

- 2 tablespoons ghee (clarified butter) or oil

- 1 teaspoon garam masala powder

- 1 teaspoon coriander powder

- 1 teaspoon cumin powder

- 1 teaspoon black pepper powder

- Fresh coriander leaves, chopped (for garnish)

- Fresh cream (for garnish, optional)


Instructions:


Marinating the Chicken:

1. Prepare the Marinade:

   In a large mixing bowl, combine the yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Mix well to form a smooth marinade.


2. Marinate the Chicken:

   Add the chicken pieces to the marinade and coat them evenly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1-2 hours, or overnight for best results. This helps the chicken absorb the flavors deeply.


Cooking the Chicken:

3. Cook the Chicken:

   Heat a large pan over medium heat and add 1 tablespoon of ghee or oil. Once hot, add the marinated chicken pieces and cook until they are browned and cooked through. This should take about 10-15 minutes. Remove the chicken from the pan and set it aside.

Preparing the Gravy:

4. Saute Onions:

   In the same pan, add another tablespoon of ghee or oil. Once hot, add the cumin seeds and let them sizzle for a few seconds. Add the finely chopped onions and sauté until they turn golden brown. This will take about 8-10 minutes.


5. Add Ginger-Garlic Paste:

   Add the ginger-garlic paste to the onions and saute for another 2-3 minutes until the raw smell disappears.


6. Add Tomato Puree:

   Pour in the tomato puree and cook until the oil starts to separate from the mixture. This will take around 10-12 minutes. Stir occasionally to prevent burning.


7. Spice It Up:

   Add the coriander powder, cumin powder, black pepper powder, and garam masala powder to the tomato-onion mixture. Mix well and cook for another 2-3 minutes to let the spices blend.


Combining Chicken and Gravy:

8. Add Cooked Chicken:

   Add the cooked chicken pieces to the gravy. Mix well to ensure the chicken is evenly coated with the gravy. Cook for 5 minutes to allow the flavors to meld together.


9. Add Cream:

   Lower the heat and pour in the heavy cream. Stir gently to incorporate the cream into the gravy, giving it a rich and creamy texture.


10. Add Cheese:

    Sprinkle the grated cheese over the chicken and gravy mixture. Stir until the cheese melts and blends into the gravy, creating a luscious, cheesy sauce. Add the slit green chilies and mix well.


11. Simmer:

    Cover the pan and let the chicken cheese handi simmer on low heat for another 5-7 minutes, allowing all the flavors to come together. Stir occasionally to prevent sticking.


Finishing Touches:

12. Garnish:

    Once done, garnish with freshly chopped coriander leaves and a drizzle of fresh cream if desired. This adds a burst of color and extra creaminess to the dish.
