Hello everyone! I hope you all are doing well and are very happy. Today, I am excited to share a simple and delicious recipe for making khoya at home. Khoya is a rich dairy product commonly used in various Indian sweets and desserts like halwas and carrot halwas. This homemade version uses just a few ingredients, making it easy to prepare. Let's dive into the recipe and see what ingredients we need.this recipe is also my YouTube channel
Ingredients:
- 1 cup powdered milk
- ½ cup raw milk
- 2 tablespoons ghee
Method:
1. Prepare the Pan and Ghee:
- Start by taking a heavy-bottomed pan. The heavy bottom helps prevent the mixture from burning as it thickens.
- Add two tablespoons of ghee to the pan. Ghee is clarified butter and is essential for giving khoya its rich flavor and smooth texture.
- Place the pan over medium heat and allow the ghee to melt completely. Make sure it doesn’t get too hot; we want it just melted, not smoking.
2. Add Raw Milk:
- Once the ghee has melted, pour in half a cup of raw milk. Raw milk is simply unboiled milk, but you can use any regular milk you have on hand.
- Stir the mixture well to combine the ghee and milk. Continue to cook on medium heat until the milk starts to heat up. This should take a couple of minutes.
3. Incorporate Powdered Milk:
- Now, it’s time to add the powdered milk. Gradually add one cup of powdered milk to the pan. It’s important to add it slowly while continuously stirring to avoid any lumps.
- Stir the mixture well using a spoon or a spatula. Ensure that the powdered milk is completely dissolved into the milk and ghee mixture. This process requires constant stirring to ensure a smooth texture.
4. Cook the Mixture:
- Continue to cook the mixture on medium heat. As you stir, you’ll notice the mixture starting to thicken. This is the powdered milk absorbing the liquid.
- Keep stirring continuously to prevent the mixture from sticking to the bottom of the pan and burning. This step is crucial as the mixture becomes thicker and more condensed.
- As you stir, you'll see the mixture gradually leaving the sides of the pan. This indicates that the moisture is evaporating, and the khoya is almost ready.
5. Achieving the Right Consistency:
- The key to perfect khoya is to achieve the right consistency. It should be thick, almost like a dough, but still slightly moist.
- Once you see that the mixture is thick and starts to leave the sides of the pan, it’s an indication that your khoya is ready.
- At this point, you can turn off the heat and continue stirring for another minute to ensure even consistency.
6. Cooling the Khoya:
- Allow the khoya to cool in the pan for a few minutes. As it cools, it will firm up slightly, making it easier to handle.
- Transfer the khoya to a plate or a bowl. Spread it out a little to cool faster. Once cooled, it should have a soft and slightly crumbly texture.
Serving Suggestions:
- Use in Sweets:

Tips for Perfect Khoya:
- Constant Stirring:
- Stirring constantly is crucial to prevent the mixture from burning and to ensure a smooth, lump-free texture.
